Dhaba style egg curry is a flavorful and spiced dish that’s often associated with the roadside eateries (dhabas) in India. Here’s a recipe to help you recreate the authentic taste of dhaba-style egg curry at home:

 

Ingredients:

  • 4 hard-boiled eggs, peeled and halved
  • 2 large onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1/4 cup yogurt
  • 1/4 cup cooking oil
  • 1 teaspoon cumin seeds
  • 1 bay leaf
  • 1 cinnamon stick
  • 2-3 green cardamom pods
  • 2-3 cloves
  • 1 teaspoon turmeric powder
  • 1 tablespoon red chili powder (adjust to taste)
  • 1 tablespoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Prepare Ingredients:
    • Hard-boil the eggs, peel them, and cut each egg in half.
    • Finely chop onions and tomatoes.
    • Slit the green chilies.
  2. Make Onion-Tomato Paste:
    • Heat oil in a pan, add cumin seeds, bay leaf, cinnamon stick, green cardamom pods, and cloves. Sauté until the spices release their aroma.
    • Add chopped onions and cook until they turn golden brown.
  3. Add Ginger-Garlic Paste:
    • Add ginger-garlic paste and sauté for 1-2 minutes until the raw smell disappears.
  4. Add Tomatoes:
    • Add chopped tomatoes and green chilies. Cook until the tomatoes become soft and the oil starts to separate from the masala.
  5. Spices and Yogurt:
    • Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
    • Whisk the yogurt and add it to the masala. Cook for 2-3 minutes until the masala thickens.
  6. Add Eggs:
    • Gently place the halved eggs into the masala, ensuring they are coated with the sauce.
